St. Louis BBQ Pork Steaks
The St. Louis backyard classic: shoulder steaks seared hard, then braised in Kansas City sauce and beer until fork-tender.
You'll need
- 4 pork shoulder (blade) steaks, 3/4 to 1 inch thick
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 cup Stoten's Kansas City BBQ sauce
- 12 oz lager
- 1 onion, sliced
How to
- Season the steaks on both sides. Sear over hot direct heat (450°F or more) for 3–4 minutes a side.
- Move them to a foil pan with the sauce, beer and onion. Cover tightly with foil.
- Braise on the cool side of the grill at about 300°F for 1 1/2 hours, until fork-tender (around 195°F).
- Lift the steaks out and give them 1 minute a side over direct heat. Spoon the pan sauce over the top and serve.
