Cherry-Glazed Smoked Holiday Ham
A fully cooked spiral ham, warmed through over cherry wood and glazed with Double S Cherry. Holiday dinner, handled.
You'll need
- 1 fully cooked bone-in spiral ham (8–10 lb)
- 1 cup Double S Cherry BBQ sauce
- 1/3 cup brown sugar
- 2 Tbsp Dijon mustard
- 2 Tbsp butter
- 1/4 tsp ground cloves
- 1/2 cup apple juice
How to
- Throw away the glaze packet. Set the ham cut side down in a foil pan, pour in the apple juice and tent loosely with foil.
- Smoke at 275°F over cherry or apple wood until the center reaches 120°F, about 2 1/2 to 3 hours.
- Meanwhile simmer the sauce, brown sugar, Dijon, butter and cloves for 5 minutes.
- Uncover the ham. Brush the glaze over the outside and between the slices every 15 minutes until the center reaches 140°F.
- Rest 15 minutes before serving. Oven method: same steps at 325°F.
